8 a.m.
Coffee + the morning hours
Espresso, breakfast pizza, soft eggs on focaccia. The room opens slow — papers, laptops, a long pour of black coffee.
12 p.m.
Lunch service
Salads, sandwiches, hand-cut pasta. A light wine at the bar if the day allows. Quick if you need quick, unhurried if you don't.
5 p.m.
Oysters + a glass
Oyster hour at the bar — a rotating list, lemon, mignonette. Champagne, Muscadet, or a martini stirred to length.
7 p.m.
Dinner
Plated mains, hand-rolled pasta, the dinner menu in full. The room finds its rhythm: candles down, music up, the bar in step.
10 p.m.
Late drinks
The kitchen winds down; the bar opens up. A nightcap, a final round, a small list of things still ready to land.
